The Grapevine Brewery’s Take On The Classic (Yet Underrepresented) Bavarian Style Is More Than Just A Well-Balanced Delight. It Also Helps Dogs!

Overview

This is the second time we’ve taken a look at a beer from Hop & Sting Brewing Company after reviewing the Grapevine brewery’s Galactic Haze IPA nearly two years ago.

But we’re back on them for good reason: Dixon’s Dunkelweizen is the first release in a new sequence of beers that H&S is calling the “Goodest Dog Classic Styles” series in honor of its very first brewery dog, Dixon. For those of you who are curious: Brewers and dogs just sort of seem to go together, and lots of brewers — both professional and amateur — tend to have an official brewery dog.

Besides being brewed in a classic and a fairly unique style for North Texas — this is only the third or fourth weizen beer of any style that we’ve reviewed at Central Track! — this beer is a fun story in a couple of other ways. For one thing, it’s a collaboration with a local homebrewer. And, secondly, part of the proceeds for the sale of this beer go to support the local pet rescue and foster charity Dallas Pets Alive!

Background on Dunkles Weissbier

Dunkles Weissbier, or Dunkelweizen as it is often call in the US, is the older, darker and less famous brother of Hefeweizen. Wheat beer styles have been brewed in Bavaria for hundreds of years now — but, prior to the late 1700s, Bavarian royalty had a monopoly on it. Per tradition, a wheat beer must use a minimum of 50 percent malted wheat in the grain bill, although this percentage is often much higher in actuality. It’s a malt- and yeast-forward style with flavors usually dominated by caramel, toast, banana and clove notes.

Appearance

Dixon’s Dunkelweizen pours a dark but wonderfully translucent copper with a rich, tan-colored head that nearly fills the top of a traditional Weizen vase. There is a bit of haze to the beer itself, which is due to the high wheat content in the grist (read: the brewers’ term for the grain) and completely expected in this style. The foam stand is thick and luxurious at the start before deflating to leave a flat surface with ultra-fine bubbles around the glass. With the exception of how quickly the head disappears, this beer is nearly perfect in appearance.

Aroma

From first sniff, Dixon’s Dunkelweizen leaves no doubt this is a wheat beer brewed in the German tradition. Phenol notes of clove and ester notes of banana, provided by the yeast during fermentation, prevail over the caramel, dark bread, crust and toast aromas provided by the malt. All these disparate smells are well-balanced, though, and they work together with an expected harmony that is rare for the style when brewed in the states.

Flavor

This is where the wheat and dark malts in Dixon’s really start to shine. Slightly sweet and very smooth, this beer fills the mouth with a rich, dark German bread flavor that expands to fill all the space. Again, the caramel has more than a bit part and it’s all spiced by the clove from the yeast. I can’t really find the banana in the flavor like I did in the aroma, but that’s honestly OK by me. The finish is dryer than expected after the moderately sweet start, though.

Mouthfeel

Dixon’s is smooth and creamy on the tongue, and unmistakably a wheat beer. It has a medium body that runs counter to what your eyes tell you it should be given its dark coloring. The high carbonation, even after a violent pour, provides an easy bite that is just right next to texture of the beer itself. This beer coats your mouth and hangs on for a bit with something of a medium-long finish.

Overall Impression

Weizen style beers aren’t my favorite. All too often, I find brewers too heavy-handed with the yeast in this style, this throwing the balance off in favor of the clove and banana bits. The yeast and malts also tend to cooperatively leave me with a feeling of sweetness that feels like a snowball rushing down a hillside. After one, I’m usually reaching for something crisp and bitter to clean up the nearly cloying feel in my mouth.

I say all that to say this: I’m downing my third Dixon’s Dunkelweizen in a row as I write this. Yes, this beer is that well-balanced.

Am I going to seek this beer out a whole lot? No, probably not. But I am enjoying it right now, and I will drink it again I’m sure.

This beer has the harmony I’m looking for in a German style wheat, and I’m really digging the darker notes of the Dunkles version. It’s an exceptionally well-crafted take of an ancient style not often seen in North Texas, and it’s worth your time to give it a try.

It also doesn’t hurt that you will be helping out a great cause right here in DFW with every sip. I mean, who doesn’t love dogs, right?

Score

On a scale of 1 to 10, I give Hop & Sting’s Dixon’s Dunkelweizen an 8.
