Community Beer Company’s Wit ‘N Wild Is A True American Wild Ale With A High Carbonation And ABV That Goes Down Surprisingly Smooth.

The goal here is to look at these area beers without our local goggles on and to wonder aloud, “Is this beer good or do I just like it because it’s local?” Should be a fun experiment, no? This week, we sipped on Community Beer Company’s Wit ‘N Wild.

Style: American Wild Ale.
ABV: 7.5 percent.
International Bitterness Units (IBUs): Not available.
Color: Pale straw.
Availability: Limited release.

More often than not, I jump at the chance to taste and write about a locally available barrel-aged American Wild Ale. It’s these gems, these risky, lighter sours that feel more like experiments are the ones that have gotten my attention lately. I think Wit ‘N Wild is a spinoff-type of beer that Community brewed a couple years ago and offered to lucky folks who attended its anniversary bash. So, assuming it’s something like that same brew a few years ago, we now get to taste it outside the walls of the brewery. Now that it’s out in the wild, I stumbled upon it at Craft Beer Cellar Dallas. According to CBC’s menu, Wit ‘N Wild starts with a Witbier base that’s then “aged for 5 months in California White Burgandy barrels with 3 Brett strains, pineapple, papaya, and mango…” So what you’re likely to get in to with this beer is a fruity aroma and flavor, a noticeable but clean Brettanomyces fermentation and way less sugar than you might be expecting.

Background on American Wild Ale.
The American Wild Ale is a sour style of beer that’s mostly about taking a standard base style of beer and weirding it up. This style represents a catch-all of crazily fermented brews, but at its core, it’s a sour version of a fruit, herb or spice beer. Wood aging is commonplace, but it should not be the dominant character. Virtually any style of beer can function as this style’s base beer, and fermentation can be done by Sacch, Brett, Pedio, Lacto or a combination of these approaches. So, yeah, there’s a lot to unpack here. Carbonation should be high on this style. While fruit is a common ingredient and base marker of the style, the addition of wild yeasts should gobble up most of the available sugars and give the beer a drier-than-expected finish.

Wit ‘N Wild pours a straw color with a moderate amount of foam. I don’t have super-high expectations for the head situation on beers in this style; it’s just part of the barrel process that messes with retention. Like Community’s base Witbier, this beer has a healthy amount of haze going on.

The nose on this beer is a bit less intense than I was expecting. And I think I mean that in a good way. This is a sour that doesn’t smell like a crazy sour, and I would bet that you could introduce someone new to sours to this beer – and they’d dig the aroma going on here. Wit ‘N Wild has a twang of pineapple, but instead of that cloyingly sweet aroma I’m used to on pineapple, it’s dry and bright. I sense a subtle wood barrel situation on the tail end of the sniff; it’s here, but it doesn’t overpower the other aromas.

As with the aroma, the flavor is also very approachable. Sometimes Brettanomyces yeasts can get weird, but it’s super-crisp flavor here. Granted, there is a subtle sour feel in play, but it’s more fruity with a bit of twang compared to acrid acidity. And though mango, papaya and pineapple combine to give the fruit profile a prominent part, I don’t get a lot of sugary sweetness on this beer. There is very little noticeable acidity on this beer, a trait that can sometimes turn me off when I drink sour styles.

Carbonation is dialed up fairly high on Wit ‘N Wild. This medium bodied beer drinks deceptively smooth for it’s 7.5% ABV, which is above range for the base Witbier style. Little sugar remains and helps to keep the twang going through the pour.

Overall Impression.
I’m a fan of this beer and would absolutely buy it again. And while I understand that this beer is a small-batch release and not a ton of bars will get kegs, I don’t think I’d do anything crazy like stand in a line to buy this beer. Of American Wild Ales available in North Texas, Wit ‘N Wild is one of them. But hey, this beer is part of a relatively small roster of American Wild Ales produced in the area. This beer isn’t an easy style to pull off, so props to Community for going the distance with it. The combination of bright fruit flavor, Brettanomyces character and mild acidity make this beer a true pleasure to drink. I don’t even have to grab for my Rolaids yet and I appreciate that.

Score. On a scale of 1 to 10, I’d give Community Beer Company Wit ‘N Wild a 8.5.
