Today We’re Reviewing A Traditional German Lager Style Beer. It’s Bready, Smooth, Earthy And Complex — All Winning Qualities For A Dunkles Bock.

Overview

Trends are a funny thing and quite often unpredictable. When I reviewed Bockstreet Boys from Turning Point a few months back, I honestly didn’t think I would see another Bock at a local brewery the rest of the year. Traditional beer styles, especially lagers with their longer fermentation times, aren’t what’s hip or trending in the DFW beer scene right now.

So imagine my surprise when I don’t just trip over another Bock but one from Tupps Brewery, another brewery known more for hitting the “in” styles like double dry hopped hazies, fruited sours and pastry anything. I just had to jump on it.

Background on Dunkles Bock

Bock is a traditional German lager style known for full malt driven flavors, dry finishes and a velvety smoothness even with relatively high strengths. Bocks run between 6.3 and 7.2 percent ABV and sport a moderate range of 20 to 27 IBUs, although the “perceived” bitterness is almost non-existent. They light copper to brown in color with good clarity and large, creamy foam stand. Flavor wise, a Bock is toasty and rich, with lots of bread notes.

While the word Bock translates from German as “Ram”, the animal has nothing at all to do with the name. The name is thought to come from differences in regional dialects where Ainpöckisch bier in Einbeck, the historical hometown of the Bock style, becomes simply bockbier by the time it reaches Munich.

Appearance

Backyard Bock pours a rich light copper or brown – depending on the light – with a light tan head of foam. The beer itself quickly settles to a striking clarity. The head acts like it wants to billow up in a luxurious foam stand as it is poured but by the time the can is empty, the head has topped out short of expectations for the style and then disappears all too fast.

Aroma

Bread! Backyard Bock smells mostly of bread and bread crust with bits of toast, dark nuts and Maillard reaction type aromas – think grilled red meat but really any food that undergoes the process of browning qualifies.

Flavor

Backyard Bock is complex, displaying several different things from toasted malts to caramel sweetness to a rich nuttiness. Overall I want to call it earthy. It is to the sweet side but not too sweet with no bitterness what-so-ever. The finish is balanced between sweet and dry, with a lager cleanliness, and of medium duration.

Mouthfeel

Backyard Bock is sensually smooth on the tongue and inside of the mouth. It clings softly to the inside of the cheeks. It is medium full bodied with almost no fizzy feel of carbonation.

Overall Impression

I like this beer. Considering how much of a traditionalist I am, that is hardly a surprise I know but I’ve had a lot of Bocks from craft breweries in the past that simply were not well-executed and not enjoyable.

Backyard Bock is both well-executed and enjoyable.

It has a couple of issues I had to ding it for when scoring though. Things like the low, ridiculously shy head and well below standard ABV are things I just can’t overlook. A beer of this style should have a big, proud foam stand that lasts a long time and it should absolutely be of above average strength. That is, in fact, a hallmark of the style.

However, when it comes to drinkability, this beer is just brilliant. The balance is near perfect for the style, offering up the malt sweetness with precision without sliding off to the cloying side of things. For you folks who hate the trend toward hopping the living shit out of everything, this beer offers nothing in the hop spectrum at all.

It is, in effect, a malt bomb. And a great one at that.

I am unsure if this is some sort of seasonal or limited release from TUPPS or if it might be something they add to the core line but I highly recommend a trip to somewhere that has it on tap or where you can get a 6-pack of it before it disappears.

Score

On a scale of 1 to 10, I give TUPPS Brewery Backyard Bock an 8.
