Pegasus City’s The Woofus Is A Mixed Up Creature. But, Like The Mythical Dallas Beast It’s Named For, The Hybrid Beer Is Greater Than The Sum of Its Parts.

Welcome to On Tap! Each week in this recurring feature, we’ll take an in-depth look at one of the many beers now available in the suddenly crowded North Texas brew scene. The goal here is to look at these area beers without our local goggles on and to wonder aloud, “Is this beer good or do I just like it because it’s local?” Should be a fun experiment, no? This week, we sipped on Pegasus City Brewery’s The Woofus.

Style: Cream Ale / Kolsch Hybrid.
ABV: 5.2 percent.

Overview.
Pegasus City Brewery launched its operations in the spring of 2017, opening with a lineup of very solid beers: Nine Volt Tripel, Cannoneer, Sixth Floor and High Point. Since then, it released a black lager called Texkaner into its main lineup, as well as four seasonal releases. The Woofus represents one of those four Pegasus City seasonal releases. And praise be, The Woofus is a very pound-able hybrid-style beer, great for summer imbibing. Its name, fun fact, comes from a mythical creature — found in right here in Dallas! — that features a horse’s neck and mane, a turkey’s tail, a pig’s body, a duck’s wings, a sheep’s head and a pair of longhorns. Background on Cream Ale.
First things first: There’s no cream in a cream ale. That’s just what the style is named. Pegasus City states that The Woofus is a hybrid between a cream ale and and a kolsch style ale, with a touch of wheat added. So keep that in mind, as this beer straddles a few styles here. Some might say that the cream ale is a response to the American light lager. However, cream ales are known to have a bit more flavor and body than those macro swill lagers. These beers are brewed with a two- or six-row pale malts, and a touch of adjunct is typical. Hops are downplayed in this style, and there’s no real guidance on which family of hops to use for bittering and aroma. Alcohol range should be on the low side here, ranging from the low fours to the mid fives. On the pour, this style should be brilliantly clear, with fair head retention. Low to medium malt and hop notes are normal on both the sniff as well as the taste. Low amounts of DMS and estery notes are acceptable, but not required on this style.

Appearance.
The Woofus pours a brilliantly clear, medium gold into the glass. Right away, this beer looks very inviting with its good clarity and poppin’ bubble situation. The package design on the can stays very much in step with the rest of PCB’s ongoing branding, with its super-matte black can and white fonts with hints of art deco splashed throughout. If you look closely, The Woofus itself contains a couple nods to Dallas landmarks.

Aroma.
Compared to a kolsch, The Woofus has more of a sweet grain nose. Likewise, some kolsch style ales can take on a bit of a lager note on the nose; The Woofus is more reminiscent of a blonde ale. Hop aroma is very subtle here, with the sweet malt barely edging it out. On the aftertaste, as I breath out my nostrils, I get a tiny bit more sweet aroma.

Flavor.
Hop bitterness is low on this beer (it’s 18 IBU, after all), but what I do sense in the bitterness department helps provide balance for the light touch of malt backbone here. For me, the hop situation is reminiscent of a varietal you might find in a traditional saison, like Hallertau. Malty sweetness is surprisingly present on the sip, and while it hangs around for a minute on the aftertaste, it remains subtly sweet but not sugary. Weird as it may sound, The Woofus hits me right in the nostalgia; it reminds me of a frosted wheat type of breakfast cereal.

Mouthfeel.
The Woofus has a medium-high carbonation level; this level of carbonation helps accentuate the bitterness and keeps the malt flavor lingering on my tongue until the next sip. The body is surprisingly full for a lawnmower beer. The Woofus finishes with a smidge of sweetness, but it doesn’t hang around too long on the aftertaste — once the carbonation stops tingling, the sweetness on the aftertaste begins to fade.

Overall Impression.
I tend to get nervous when I see one of those hybrid style beers. It’s just, well, the sign of a beer gone weird – and not necessarily in a good way. But that’s not what’s going on here with The Woofus. Because the cream ale and kolsch styles are so closely-related, and because both are easy-drinking and refreshing, this combination just works. I don’t perceive any off flavors here, and the malt and hops play nice with each other to achieve a lasting balance though the first pour. I sometimes get bored with the kolsch style, too, so The Woofus brings a little bit more to the table for me. And the wheat addition adds a bit more body and roundness to this beer that might otherwise be absent. I find myself waffling between wanting that little bit of extra sweetness on this beer, and then wanting it to finish drier and brighter. But then as I sit here and waffle on it with the aftertaste, the delicate flavors and aromas dissipate and it’s time for me to sip and debate internally all over again.

Score.
On a scale of 1 to 10, I’d give Pegasus City Brewery The Woofus a 7.75.
